Creative Re-purposing: BBQ Veggie Burger Salad

It's July 5th, you wake up and realize that you have not only a few left over veggie burgers, but waaaayyy to many leafy greens in the fridge and no more buns... What do you do? Make a kick-ass salad!



BBQ Veggie Burger Salad: (serves 1)
  • 1 veggie burger
  • 2-3c leafy greens of your choosing
  • 1 tomato (I used a yellow heirloom tomato because it was what I had on hand)
  • a few sweet or red onion slices
  • other burger-type toppings. Such as: peppers, daiya, avocado, ect.
  • 2T bbq sauce
  • a little bit of water or oil to thin sauce
Reheat burger (microwave, bake, grill, whatever works best for you). Slice into 1/2" long strips. Set aside.

Layer greens and veggies on a salad plate/bowl. Place burger strips on top. In a small dish mix together bbq sauce and just a enough water and/or oil to thin to a vinaigrette constancy, and drizzle over salad.


Back in the day I used to loooooove Nirvana, I just recently found out about this song. So good!
