Too Cool For School: Hipster-Monkey Cookies

My beautiful cousin and her amazing hubby were married in Florida two weekends ago (congrats again you two!!) I was lucky enough to be in the wedding :) Sunset beach wedding, cool ocean breeze, spending time with my awesome family members, it was such a blast!

Dear Dad,


You are my hero, I attribute so much of who I've become to the man that you are. Thank you for always believing in me and challenging me to always try harder. I may not have always understood why you did things the way you did but looking back I understand that you were always looking out for me.


I could never say thank you enough for all of your love and warmth. Happy Father's Day Dad, I love you!

A Little Latin Flair: Roasted Pablano Plantain Tofu Wrap


Today I realized that I've been meat, egg and dairy-free for a little over 6 months now, and I've never felt better. My skin rarely breaks out, and it looks and feels much better than it ever has. The energy I have is a complete 180 from where it used to be. I remember always having trouble waking up in the morning, feeling exhausted by 2 or 3 in the and not being able to sleep at night. All those problems a thing of the past. Bonus for my workouts. My muscles heal faster, and if I get sick, (which is rare) it really only lasts a day or two.

It's Offically Summer In My Book

Summertime in Minnesota = Farmers Markets. Which also means a happy me. Today Marks the first little box of many goodie filled boxes to come this growing season. And if it weren't for my lovely friend Mrs. Jen Thompson, I would have never heard about the awesomeness that is a CSA share (P.S. check out her site and blog, she's an AMAZING photographer!). Also I want to say thank you to the Blue Ribbon Farm for the lovely veggies!

Things That Sound Scary but Aren't: Quinoa Tabouli

Or even complicated for that matter (seriously, I made this for my lunch this morning and I'm pretty sure I barely had to check on it as I scrambled around the apartment to get ready for the day)


Alas, I don't know about you but a lot of the closest people to me are also the pickiest eaters I know, and usually won't eat anything that "sounds weird".... (which is unfortunate because to them most of the things I cook "sound weird"... grrr) But fret not, I'm here to try and un-scary some really good food.
