I loooove squash!! But recently I have found myself with an abundance of zucchini. I think I might have a problem because it seems whenever I pass by a farmers market I am compelled to buy a couple... which wouldn't be such a bad thing except for the fact that I'm and r-tard and forget that every Wednesday I get a CSA goodie box full of seasonal veggies. (fun fact: zucchinis are definitely in season right now).
Last week I went to go pick up my box and was in awe of the mammoth forearm-sized squash. Which caused me to wonder "What am I going to make wth this???" which led to "Holy crap!! What the hell am I going to do with all of the other ones??!!" (I tend to panic easily).

Mike found it two years ago (literally) in the midst of one of his Men's Health magazines and on a whim we decided to make it, it was amazing, so we lovingly tore the page out and tucked it away in our "stuff drawer" (don't judge, every kitchen has one)

Oven Love: Portovegetable Lasagna
Yet another request from and the ever lovely Rachel :) I present to you a dairy-free, egg-free, vegan "cheesy" lasagna. I know it's technically an Italian dish, but to me it's about as American as apple pie. That said it doesn't mean it's not a classic :)

Italian Recipe Round Up: Bruschetta, Minestrone, and Grilled Veggies
So I think I've discovered that I can never go back to eating dairy or eggs again. I tried eating dairy on Thursday, woke up sick Friday... But felt better yesterday morning. Then yesterday afternoon I made fried rice for my husband and couldn't resist having a bowl myself... bad idea. So here I sit nauseated and all sorts of unpleasantness... But it's not all bad, at least I now I'm fairly positive I've nailed down the source of my mysterious stomach pains. Also while I was feeling better I made a slew of Italian goodies.
