That Sh*t is Fancy: Sesame Djion Crusted Squash Steaks with Sauteed Greens and Roasted Beets
I am a cook, but sometimes I feel my artistic side poking through. I love taking photos of my dishes (I know some are not so great) but a pretty photo is half the battle, sometimes you just have to make pretty food.

"Chicken" Salad and the Scenic Route
This morning while rummaging though my fridge I happened to see that I had both grapes and celery... And briefly I longed for the days of homemade chicken salad sammiches... Mostly fir the wonderful contrast between the sweetness of the grapes and the savory of the celery all mixed together in creamy harmony.

A Little Latin Flair: Roasted Pablano Plantain Tofu Wrap
Today I realized that I've been meat, egg and dairy-free for a little over 6 months now, and I've never felt better. My skin rarely breaks out, and it looks and feels much better than it ever has. The energy I have is a complete 180 from where it used to be. I remember always having trouble waking up in the morning, feeling exhausted by 2 or 3 in the and not being able to sleep at night. All those problems a thing of the past. Bonus for my workouts. My muscles heal faster, and if I get sick, (which is rare) it really only lasts a day or two.

Anything You Can Make, I Can Make Vegan: Chipotle-Rubbed Tofu
I love perusing through recipes of all kinds. Meat, no-meat, it doesn't matter to me. I can literally spend hours drooling and day dreaming over dish after dish. I'm also not afraid to cook meat. Even though I don't eat it it doesn't bother me, plus I know that my hubby would be a sad panda if I didn't.

Food is love: Honey Mustard Tofu (2 recipes)
Cooking keeps me sane. I swear to God. (Just needed to throw that out there)
I used to make a mean chicken salad back in the day, and by mean I mean fabulous! And by back in the day I mean last year haha… Anyways I would’ve lived off of it if given the chance.

Summers In The Air: Spicy Lime Tofu
Say what you will about the humidity, I love it! Such a welcome change from the cold and rain.
Here's another Men's Health redo and a favorite in this apartment. It's fast and looks impressive enough for entertaining. Also minimal clean up! Seriously do I need to keep giving you reasons to make this??

Southwest Cobb
Even though life has been a little crazy as of late and I haven't had time to do as much cooking, I still on average make about 3-4 meals a day. So with less time spent at home I've been in need of amazing breakfasts and energizing lunches that are also quick to throw together.

Is That Bacon I Smell?
I finally got my butt to the grocery store the other day, and while on a quest to pick up some essentials (fruits, veggies, Jif for the hubby) I came across a small bottle of liquid smoke. I had heard of the stuff before but never actually cooked with it. I knew that you could use it in barbecue sauces and thought that would be fun so I picked some up.

So Fast It'll Blow Your Mind: Savory Tofu Pasta
No joke, this recipe will take you 15 minutes MAX! Mike found it two years ago (literally) in the midst of one of his Men's Health magazines and on a whim we decided to make it, it was amazing, so we lovingly tore the page out and tucked it away in our "stuff drawer" (don't judge, every kitchen has one)

Getting Back on Track (Pun Intended) and Cashew Tofu
Just got done running my little heart out, at 4am. To be honest with how crazy busy I've been not only has my cooking kind of been put on the back burner (also pun intended), but my Urbanathlon training hasn't been going as steadily as I would have hoped either.
That's why I decided for the next few posts I'll be taking my favorite all time go-to recipes, and revamping them! These are recipes that either came from or were inspired by recipes in magazines like Men's/Women's Health, and Cooking Light. The also usually contained meat, so I'm going to remake them meatless :)

Baby Steps: Curried Apricot Seitan
Here's a recipe for those of you who aren't really sure about Indian cuisine. Think of it like a baby step. It's sweet with bit of curry flavor. Again by no means is this traditional Indian food, but that doesn't mean it's any less amazing. It was one of my favorite things to make this past summer, only now I use seitan instead of chicken breasts. Also, you'll need seitan for my next upcoming recipes.
