Happy Cinco De Mayo!!



Easy Veggie Lentil Taco Filling
  • 1T oil
  • 1/2 onion, diced
  • 1/2 small butternut squash, diced
  • 4oz baby bella mushrooms, diced
  • 1 small zucchini, diced
  • 1 small pepper (I used a habanero)
  • 1/4c salsa
  • taco seasoning to taste (I use a homemade blend really similar to this one)
  • 1c veggie broth
  • a drizzle of agave
  • 1c cooked lentils


Heat oil in pan over medium heat, add veggies and salsa and saute 10 minutes. Add seasoning, broth, and agave simmer 5 minutes longer. Mix in lentils and cook til heated. remove from heat and serve.
