Easy Veggie Lentil Taco Filling
- 1T oil
- 1/2 onion, diced
- 1/2 small butternut squash, diced
- 4oz baby bella mushrooms, diced
- 1 small zucchini, diced
- 1 small pepper (I used a habanero)
- 1/4c salsa
- taco seasoning to taste (I use a homemade blend really similar to this one)
- 1c veggie broth
- a drizzle of agave
- 1c cooked lentils
Heat oil in pan over medium heat, add veggies and salsa and saute 10 minutes. Add seasoning, broth, and agave simmer 5 minutes longer. Mix in lentils and cook til heated. remove from heat and serve.
