Easiest Soup in the WHOLE Fricken World: Sweet Potato Coconut Curry Soup

 
I was dragging my ass a bit this morning... I needed a lunch to bring to work, as well as a something for breakfast. I had left over coconut milk that I needed to use up, like asap! I hate wasting food, I always feel so terrible... but anyways by way of either Finding Vegan or Food Gawker (I can't remember which) I found this pretty little dish which to my surprise literally took me 6 minutes to make.

Sweet memories: Kheer (Indian Rice Pudding)


Even though I'm Colombian born, I'm Minnesota raised and my experience with ethnic food as a child was almost non-existent. Basically limited to tacos and spaghetti... But I have one faint memory back when I was in maybe preschool, of a day that they tried to introduce us to foods from other cultures. I honestly can't recall the majority of what we tried that day, but there was this one dish... it was simple, rice with milk raisins and cinnamon. I remember going home that day and demanding my mom making rice because I wanted the rest of my family to try it!

Seitan Tikka Masala FTW

 
I looooove masala sauce! It's so creamy and tomato-y and flavorful! Oh lord, I could not be happier about the way this dish turned out! Mike had a version of this back on my birthday at Star of India and I'm pretty sure I ate most of it (along with the rest of my dish and... all of the rice... ha, did I mention Indian food is my weakness?)

Baby Steps: Curried Apricot Seitan


Here's a recipe for those of you who aren't really sure about Indian cuisine. Think of it like a baby step. It's sweet with bit of curry flavor. Again by no means is this traditional Indian food, but that doesn't mean it's any less amazing. It was one of my favorite things to make this past summer, only now I use seitan instead of chicken breasts. Also, you'll need seitan for my next upcoming recipes.

New Best Friend: Cashew Milk

 
I can't get over how amazing this stuff has been. Today I've been putting it in everything possible. I cooked my oatmeal in it (p.s. there is nothing wrong with breakfast for lunch) and it turned out super creamy. I steamed a sweet potato and smashed some into it, sooo good! I even just straight up drank a glass.

It Probably Exsists in Your Cupboard: Red Lentil Dahl

 
It's something I had seen on the menu at our local Indian restaurant but had never ordered before. I'm not sure why because it was sooo amazing! Also chances are if searched your kitchen you most likely have everything on hand to make this super easy colorful little dish.
