Sometimes I Feel Like A Nut: Homemade Nutella

I feel like I'm super obsessed with nut butter spreads... since I've posted a few now haha... (aaannnd I still have more that have yet to be posted)


But it didn't stop me from making another. Nutella seems to have a cult-ish following, I mean it does taste good but when your ingredients include sugar and chocolate it's hard to mess that up :) Seriously it's like dessert in a little plastic jar.

Sadly Nutella contains milk, and thus makes my stomach wanna punch it's way out of my body.... so I did what I do best and came up with a version without dairy! HA


Homemade Nutella:
  • 2c roasted hazelnuts
  • 1T oil
  • 1/4c unsweetened cocoa powder
  • 1/2c - 3/4c non dairy milk (I made my own hazelnut milk for this recipe)
  • 3/4c - 1c sweetener of your choosing (agave, maple, ect.)
  • 1/4t of salt
  • 1t vanilla
Place nuts and cocoa powder in a food processor. Begin to incorporate remaining ingredients and keep your eye on the consistency. The more liquid you add the thinner the spread.

It's Okay To Take It Easy Sometimes: Baked Lentil Sweet Potato

I'm not dead I promise!! I just been on kind of a slump lately. My intentions this upcoming week are to do a little baking and creative cooking. But in the meantime there's this blog called The Vegan Stoner, which I absolutely love! I love the principal behind their site, that vegan food doesn't need to be this big complicated ordeal. It can be simple and amazing all at the same time.

I came across the baked lentil potato and was excited because I had everything on hand to make it... well other than reular potatoes so I used a sweet potato instead, I highly recommend that you whip one up. They were sooo simple and yet so very extraordinary!

Rainy Days and Setchy Bananas...

What a melancholy day... chilly and drizzly. Mile's and I have been spending the evening inside for obvious reasons. So what is a food obsessed girl to do? Decorate bananas of course :)


It's super easy, just take a pin, thumb track or exacto knife and let your imagination run free. Mike will be happy to wake up tomorrow morning to some fancy bananas. Either that or he'll just shake his head.

Anything You Can Make, I Can Make Vegan: Chipotle-Rubbed Tofu

 
I love perusing through recipes of all kinds. Meat, no-meat, it doesn't matter to me. I can literally spend hours drooling and day dreaming over dish after dish. I'm also not afraid to cook meat. Even though I don't eat it it doesn't bother me, plus I know that my hubby would be a sad panda if I didn't.

Seriously, I think I've hit the point of tired where I don't actually feel tired, rather everything just seems funny. My husband also informed me that I've been a sassy-pants lately, so there's that haha. (Side note: I keep reading cantaloupe as can't-a-loop-eh)

Mr. Blair Day

To Mr. Blair,
You were an inspirational man and you touched the lives of many people students or otherwise. I am sad to hear that you passed yesterday. You will be greatly missed.

To Jodee,
I am so deeply sorry for your loss... my heart aches when I think about what happened, and I hate to know that someone I care about is going through so much pain. It might not be much but just know that you, your son and families are in the hearts, minds and prayers of everyone. We all love you and just know that we are all here for you.

Yesterday we lost a great man and a wonderful teacher... today is Mr. Blair day, if he touched your life or if you knew him at all please help pay your respects and wear black and orange in his memory.

Adventure Day Was a Great Day!

Today is my adventure day.


It's true most Saturdays I spent my time indoors bored outta my flippin' gourd... but not as of late. The big guy and I have been working are proverbial asses off. It's been big crazy combination of exciting and stressful, but all in all we agreed it's been fun. And with as busy as we've been I've found that in my spare time the last thing I want to do is sit around. It just feels like a waste.

Easiest Soup in the WHOLE Fricken World: Sweet Potato Coconut Curry Soup

 
I was dragging my ass a bit this morning... I needed a lunch to bring to work, as well as a something for breakfast. I had left over coconut milk that I needed to use up, like asap! I hate wasting food, I always feel so terrible... but anyways by way of either Finding Vegan or Food Gawker (I can't remember which) I found this pretty little dish which to my surprise literally took me 6 minutes to make.
