Happy Healthy Food Day!!! Winter Salad with Vegan Feta

Appentetly today is food day, and we are encouraged to celebrate by eating more fruits and veggies. Now you maybe thinking "ugh I hate fruits and veggies..."



and to that I say, grow up and think outside your proverbial junk food box. Good food is all around you and hardly ever comes from out of a package (or from another living being for that matter.) And it's a cinch to prepare :)


To celebrate I made a Pomegranate Salad with Roasted Citrus Candy-Striped Beets and Vegan Feta, it's super easy, it takes a wee bit of prep but the result was sooo very worth it

Winter Salad: (serves 1)
  • 1/2c cubed candy-striped beets (or regular beets)
  • 1t oil
  • 1t thyme
  • salt
  • a squeeze of fresh orange juice
  • 2-3c fresh mixed spring greens
  • 1T thinly sliced red onion
  • 1/2c pomegranate arils
  • 1/4c vegan feta (tastes incredible by the way!! recipe from Happy Herbivore )

 Pre-heat oven to 375, toss the beets together with oil, thyme, salt and citrus. Place on a pan and roast for 20-30 minutes or until soft (This would be a good time to prep the "feta"). Set aside to cool.

in a bowl place, greens, onion, beets, pomegranate arils, and vegan feta. Drizzle with a good quality olive oil and balsamic vinegar if you desire.
