I kid you not, at one point I was buying around 10 lbs a week (which isn't conclusive to a local diet haha) but like I said I love the little yellow buggers.
There are seriously soo many things you can do with them: banana bread, oatmeal topping, shakes, french toast, breakfast bowls, making a sweet cream for muesli, dressing up a pb&j, egg replacers in cookies and brownies, you can even tattoo them. Basically, they are kind of an amazing fruit.
(P.S. Bananas are great either pre or post work out and hangover cure?? You betcha)
Anyways, here's something new to add to your arsenal of banana recipes. It's warm, and sweet and full of ooey gooey awesomeness. You prepare it on the grill and did I mention so easy a five year old could assemble it for you?
I give you:
Grilled Banana Boats: (makes 1)
- 1 banana (yellow, not overripe)
- toppings of your choosing! For example peanut butter, raisins or other dried fruit, chopped nuts, flaked coconut, cinnamon, marshmallows (they do make vegan ones), agave or maple syrup, jam, chocolate chips... just get creative :)
Take the banana and with a knife, make a slit in the peel from stem to end.
Pull peel open but do not remove.
Stuff desired toppings in and under the peel while still keeping the peel intact.
Next, cover in foil and place one the grill. Let it cook for 10 - 15 minutes (you'll know it's done when the peel is dark). Open foil and use a spoon or fork dig in and eat!
Here's hoping everyone had an ass kicking summer!! Now zip up them hoodies, and hit them books, fall is finally here!!!! (And in the words of a good friend of mine "it's almost fake blood time of year")
