It's Like a Hug for your Tummy: Creamy Steal Cut Oats

Oatmeal is amazing. It's like a base or a blank canvas for which to build the perfect breakfast. Sweet or savory it can be whatever you like! I love to make mine colorful and bright, using lots of fresh fruit, cinnamon and raw nuts.


So here's to breakfast and all of it's awesome possibilities! 



The recipe below is for basic unsweetened steel cut oats. I'm a fan of their taste and texture, chewy and nutty. I also don't add a sweetener. I like to add sweetness with chopped up fruit versus sugar, syrup ect. Plus it adds more flavor and bulk.


Simple Creamy Oatmeal (serves 1)
  • 1/4c steel cut oats (40g)
  • 1/2c water
  • 1/2c cashew milk
  • a pinch of sea salt
  • 1/4t vanilla extract
  • 1t cinnamon
  • 2T ground flax seed
  • 1/2 banana, sliced
  • a few blueberries
  • a few dried cranberries
Heat a small sauce pan over medium heat, add oats, water and cashew milk to pan. Add pinch of salt. Bring to a simmer and reduce heat slightly, do not boil. Simmer 10 minutes stirring every now and again. Add vanilla and cinnamon, simmer 5 - 10 minutes  longer or until liquid is absorbed.

Remove from heat and spoon out into cereal bowl, stir in flax. Top with fruit.





I promise my oatmeal almost never looks actually looks this calculated, I just wanted to make it pretty for you guys haha.
