Fruity Tri-Colored Quinoa Pudding (serves 2, but you can easily double or triple, and so on)
- 1/2c dry tri-colored quinoa (or regular quinoa if that's what you got)
- 2c water
- 1 1/2c almond milk
- 1t cinnamon
- pinch of ginger, nutmeg and cloves
- 1/2t vanilla
- 1/4c dried fruit (I used golden raisins and cranberries)
- 2T pumpkin seeds
- 1 small apple, diced
- 1/2 banana, sliced
- a few blueberries to garnish (optional)
Add almond milk to the sauce pan, simmer for 10 minutes. Add spices, and dried fruit. Simmer an additional 5 - 10 minutes or until all the liquid is absorbed.
Spoon equal amounts into two bowls and top with remaining ingredients.
