What better way to start your day: Fruity Tri-Colored Quinoa Pudding

I'm sure you've heard it all before: quinoa is for you. And if you buy it in bulk, it's also pretty cheap! But have you ever tried it for breakfast? This recipe (inspired by Poor Girl Eats Well's recipe) is great for a weekend morning, or a weekday that you have a little extra time.




Fruity Tri-Colored Quinoa Pudding (serves 2, but you can easily double or triple, and so on)
  • 1/2c dry tri-colored quinoa (or regular quinoa if that's what you got)
  • 2c water
  • 1 1/2c almond milk
  • 1t cinnamon
  • pinch of ginger, nutmeg and cloves
  • 1/2t vanilla
  • 1/4c dried fruit (I used golden raisins and cranberries)
  • 2T pumpkin seeds
  • 1 small apple, diced
  • 1/2 banana, sliced
  • a few blueberries to garnish (optional)
Heat a saucepan on the stove and pan dry quinoa to the pan. Stir constantly for 1 minute. Then add water to the pan. Bring to a boil and reduce heat. Simmer for 15 - 20 minutes or until liquid is absorbed.

Add almond milk to the sauce pan, simmer for 10 minutes. Add spices, and dried fruit. Simmer an additional 5 - 10 minutes or until all the liquid is absorbed.

Spoon equal amounts into two bowls and top with remaining ingredients.
