Give You're Ass a 'Good Morning' Kick: Spicy Tempeh Hash

Good ol' hardy breakfast hash. It's something I haven't had for years EVER!


And I'm not talking about frozen ore-lda here, I'm talking about fresh, from scratch and spicy! Cooking is an adventure, and if you don't like to get you're hands dirty... get out of my kitchen :) 

I warn you, this recipe knocked us on our asses this morning (it was great haha) adjust heat as needed.


Spicy Tempeh Hash (serves 2-4)
  • 1T toasted sesame oil (or whatever you have on hand)
  • 4 - 5 baby red potatoes, cut into small chunks
  • 1/2 small onion, diced
  • 3 - 4 baby bella mushrooms, diced
  • 2 garlic cloves, minced
  • 1/2 jalapeno pepper, diced (replace with green pepper if spicy isn't you're thing)
  • 2t parsley
  • 1t sarvory
  • 1/2t red pepper (reduce if needed)
  • 4 oz tempeh, chopped into 1/2" pieces
  •  1 roma tomato, diced
  • 1/4 red bell pepper, diced
  • 1T dijon mustard
  • salt and pepper to taste
Place chopped potatoes into a glass microwave safe bowl with a 1/2" of water in the bottom, cover with damp paper towel or glass plate and microwave 3 minutes or until a little soft.

Heat oil in skillet over medium heat. Toss in potatoes, onions, mushrooms, garlic and jalapeno and spices. Saute 4 or 5 minutes, and toss in tempeh and remaining ingredients. Toss everything together thoroughly so that dijon is evenly distributed. Saute additional 5 minutes (or longer if needed)
