Lazy sundays

 So tonight my motivation to cook was lost somewhere out there in the crazy blizzard. So here goes... quick, simple and most importantly warm.



Sauteed Veggie Wrap (serves 1)
  • 1 garlic clove
  • 1/2 small onion
  • 2 or 3 baby bella mushrooms
  • 1 small carrot, sliced
  • 4 broccoli florets, chopped
  • 1/2 roma tomato, diced
  • 1/4 red (or green) bell pepper, diced
  • 1T balsamic vinegar
  • 1t honey mustard
  • spinach
  • 1 tortilla wrap (I use La Tortilla Factory)
(longer way - Some veggies cook faster than others so I like to add them to the pan at different times)
Heat a lightly oiled pan, toss in garlic, onion, mushroom, and carrot slices and saute 3-5 minutes or until soft.

While onions are cooking lay out tortilla and smear the center with mustard and top with spinach, set aside.

Add to pan broccoli and saute 2 minutes. Add tomato saute two more minutes. Add bell pepper and balsamic vinegar and saute 1 minute longer. Remove from heat and place in the vegetable mixture over spinach and wrap up.

Lay out tortilla and smear center with mustard, top with spinach and set aside.

Heat lightly oiled pan. Add all veggies to pan saute for 8 - 10 minutes. Add balsamic vinegar and toss well to coat.

Place vegetable mixture over spinach and wrap up.


I served this with a big bowl of Amy's Organic Minestrone. Here's hoping it quits snowing soon.
