Summers In The Air: Spicy Lime Tofu

Say what you will about the humidity, I love it! Such a welcome change from the cold and rain.


Here's another Men's Health redo and a favorite in this apartment. It's fast and looks impressive enough for entertaining. Also minimal clean up! Seriously do I need to keep giving you reasons to make this??


(The original recipe calls for tilapia, so if you have a significant other who still eats meat like mine it's an easy swap to make)


Spicy Lime Tofu: (serves 2, original recipe here)
  • 1T olive oil
  • 1/2t red pepper flakes
  • 1 limes worth of juice
  • 2c spinach
  • 12 asparagus spears (with the hard ends cut off)
  • 2 green onions, sliced
  • 2 - 3 or 4 oz slices of extra firm tofu (drained and pressed)
  • salt and pepper to taste
Preheat oven to 450

Combine oil and red pepper in a small dish and microwave for 30 seconds. Set aside.


Take two 18" long sheets of foil and place 1 cup of spinach in the middle of each sheet. Lay six asparagus spears across the top of the spinach. Top with tofu slice and season with salt, pepper and lime juice. Drizzle chili oil over tofu. Wrap foil over tofu creating sort of a tent. Place into the oven and bake 10 - 12 minutes. Remove, open and eat!
