Nut Butter Goodness: Raw Sunflower Seed Butter

 
Are you sick of peanut butter yet? I didn't think so. But by chance you feel like changing it up? Give sunflower seed butter a shot!



Sunflower seeds are super cheep and so good for you. This recipe calls for raw sunflower seeds for a little extra boost of nutrients. You could use toasted if you like. It will have a stronger flavor and you may not have to use as much oil or salt (if they're already salted)

As I've learned with raw nut butters it takes a little more oil and the texture might be a little more paste like. Raw nuts and seeds also take much longer to process than roasted, but the basic principles still apply.


Raw Sunflower Butter
  • 2c raw sunflower seeds (shell removed)
  • pinch of sea salt
  • 1/2T sweetener (agave, maple, honey ect. also use more if desired)
  • 3 - 6T oil (olive, flax, almond ect.)
Place seeds and salt and sweetener in food processor and process. Add oil 1T at a time while seeds are processing. Occasionally scrape sides down with a spatula.

Seeds will form a powder and eventually a "dough ball" when this breaks down and begins to build up on the sides check the consistency. If you like more of a paste stop, if you like more of a butter continue to process checking texture every couple of minutes until desired constancy is achieved.
